For the Steak: Prepare the Breading- Combine 2 cups of all-purpose flour, 1 teaspoon salt, black pepper and paprika in a shallow dish. Add 1/2 teaspoon garlic powder, onion powder and 1/4 teaspoon cayenne pepper. Mix the dry ingredients well. This mixture will be used for breading the steak. Prepare the Egg Wash- Beat 2 large eggs with 1/2 cup buttermilk together in another shallow dish.
Coat the Steaks- Take a cube of steak and coat it evenly with the flour mixture. Shake off any extra flour.
Dip in Egg Wash- Dip the flour into the egg wash and allow any excess to drain off.
Bread Again- Dip the steak into the flour mix by pressing the breading into the steak to make it stick well. Put the steak coated in breading on a dish, then repeat the same process with all cube steaks.
Heat the Oil- In a large, heavy skillet, pour enough vegetable oil to have about 1/2 inch of oil in the pan. Heat the oil over medium-high heat until it reaches a temperature of around 350°F (175°C). You can use a cooking thermometer to check the temperature.
Fry the Steaks- Place the cube steaks breaded into hot oil. Cook for about 5 minutes per side or until golden brown and crisp. Don't overload the pan; you can fry the pieces in small groups.
Drain and Rest- Remove the fried steaks from the oil with tongs after they're cooked. Place them onto a wire rack or on a plate lined with towel paper. This helps drain leftover oil and helps ensure that they are crispy.
For the Gravy:Make a Roux- Prepare 1/4 cup of the oil for frying over medium-high temperature in a separate pan. Gradually whisk into 1/4 cup of all-purpose flour, creating a Roux. Cook, stirring continuously, until the roux becomes lighter golden brown. Add Milk- Slowly add two cups of milk while whisking the roux. Continue to whisk to stop lumps from developing.
Thicken the Gravy- Cook and mix the mixture until the gravy becomes thicker and smooth. This usually takes 5 to 7 minutes. If the gravy is too dense, increase the milk until you reach the desired consistency.
Season- Add salt and pepper according to your preference. You can change the seasonings according to the taste you prefer.
To Serve- Finally, Place the chicken-fried steaks on a serving plate and generously pour the creamy white gravy. You are ready to serve and enjoy your Texas Roadhouse Chicken Fried Steak!
