Ingredients
  

  • Enoki mushrooms: 1-2 packs (around 100-200g each)
  • 1 teaspoon gochugaru (Korean chili flakes)
  • 1 tablespoon gochujang (Korean chili paste)
  • Garlic: 3-4 cloves, minced
  • Soy sauce: 1-2 tablespoons
  • Sesame oil: 1 tablespoon 

Instructions
 

  • Firstly, Rinse the enoki mushrooms thoroughly and cut off the root ends. Separate the mushrooms into small bunches.
  • Heat a skillet or wok on high heat. Add sesame oil and swirl to coat the pan.
  • Add chili peppers and garlic to the pan and stir-fry until fragrant for 10-15 seconds until fragrant.
  • Add enoki mushrooms to the pan and stir-fry for another 1-2 minutes until they soften and become tender.
  • Add soy sauce to the pan and stir-fry for another 1-2 minutes until the mushrooms are fully coated. (Optional- For a slightly tangy taste, add 1-2 teaspoons of rice vinegar or mirin to the pan along with the soy sauce.)
  • Garnish with chopped green onions and serve hot.
