- Enoki mushrooms: 1-2 packs (around 100-200g each)
- 1 teaspoon gochugaru (Korean chili flakes)
- 1 tablespoon gochujang (Korean chili paste)
- Garlic: 3-4 cloves, minced
- Soy sauce: 1-2 tablespoons
- Sesame oil: 1 tablespoon
Firstly, Rinse the enoki mushrooms thoroughly and cut off the root ends. Separate the mushrooms into small bunches.
Heat a skillet or wok on high heat. Add sesame oil and swirl to coat the pan.
Add chili peppers and garlic to the pan and stir-fry until fragrant for 10-15 seconds until fragrant.
Add enoki mushrooms to the pan and stir-fry for another 1-2 minutes until they soften and become tender.
Add soy sauce to the pan and stir-fry for another 1-2 minutes until the mushrooms are fully coated. (Optional- For a slightly tangy taste, add 1-2 teaspoons of rice vinegar or mirin to the pan along with the soy sauce.)
Garnish with chopped green onions and serve hot.
